Traditional Kale with Potatoes and Vegan Sausages
Ingredients for 4 servings:
- 1 kg fresh kale (or 500 g frozen kale)
- 1 onion, finely chopped
- 2 tbsp vegetable oil (e.g., rapeseed oil)
- 1 tbsp mustard
- 500 ml vegetable broth
- 2 tbsp oats (for thickening)
- Salt and pepper, to taste
- 1 tsp mustard seeds
- 1 tsp nutmeg
- 4 vegan sausages (optional, for a traditional touch)
- 8 small floury potatoes
Preparation:
Prepare the kale: Wash the fresh kale thoroughly, remove the thick stems, and chop the leaves finely. If using frozen kale, simply thaw it beforehand.
Cook the potatoes: Peel the potatoes and cook them in lightly salted water until tender.
Sauté the kale: Heat the oil in a large pot and sauté the chopped onion until translucent. Add the prepared kale and briefly sauté it as well.
Simmer the kale: Add the vegetable broth, mustard, and mustard seeds, stirring well. Let the kale simmer on low heat for about 30-45 minutes until soft, stirring occasionally. Sprinkle in the oats to thicken the mixture.
Season: Season with nutmeg, salt, and pepper to taste. Add more vegetable broth if necessary, to avoid the kale becoming too dry.
Fry the vegan sausages: While the kale is simmering, fry the vegan sausages in a pan with a little oil until crispy.
Serve: Plate the kale with the potatoes and vegan sausages.
Tip: Traditionally, kale is served with hearty sausages like "Pinkel" or "Mettenden," but the vegan version with plant-based sausages is just as flavorful. For variety, you can also serve it with smoked tofu or vegan meatballs.
