Easy Recipe for Brussels Sprouts with Peanut-Sesame Dressing – Quick and simple: oven-roasted Brussels sprouts served with a creamy peanut-sesame sauce. A vegan dish that even kids will love!
Ingredients:
- 500g Brussels sprouts, halved
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp chili flakes (optional, reduce for kids)
- Salt and pepper to taste
For the Peanut-Sesame Sauce:
- 3 tbsp creamy peanut butter (unsweetened)
- 1 tbsp tamari
- 1 tbsp sesame oil
- 1 tbsp maple syrup (omit if watching sugar spikes)
- 1 tsp lime juice
- ½ tsp ground ginger
- 100ml water (more if needed to thin the sauce)
- 2 tbsp roasted sesame seeds for garnish
Preparation:
- Prep the Brussels Sprouts: Wash the Brussels sprouts and remove the outer leaves. Halve the sprouts and place them in a bowl.
- Season: Drizzle olive oil, smoked paprika, garlic powder, chili flakes, salt, and pepper over the Brussels sprouts. Mix well to coat evenly.
- Roast the Brussels Sprouts: Spread the seasoned sprouts on a baking sheet and roast in a preheated oven at 200°C (fan) for about 20-25 minutes, until crispy and golden brown. Turn once halfway through.
- Make the Peanut-Sesame Sauce: In a small bowl, mix peanut butter, tamari, sesame oil, (maple syrup), lime juice, and ground ginger. Gradually add water until the sauce reaches a creamy consistency.
- Serve: Remove the roasted Brussels sprouts from the oven and drizzle with the peanut-sesame sauce. Sprinkle with roasted sesame seeds.
- Enjoy: Best served warm, this spicy Brussels sprouts dish pairs well with rice, quinoa, or as a side dish to a vegan meal.
This dish stands out because it combines the slightly bitter taste of Brussels sprouts with a creamy, nutty sauce, and the roasted texture is something kids often love!
Tip for Kids: If your kids don't like spicy food, skip the chili flakes and increase the maple syrup in the sauce for a milder, slightly sweet note
